Fermentation seems slow: Ensure temperature is adequate (65-72°F). If using wild fermentation without starter, it may take 7-10 days. Be patient.
Too salty: Next batch, reduce salt slightly to 1.25 teaspoons, but never go below 1 teaspoon per quart for safety.
Fizzy or alcoholic smell: Some alcohol production is normal in fruit ferments. If excessively fizzy, fermentation may have been too warm or too long. Still safe if pH is below 4.6, but flavor may be affected.
